All of us know we need to eat more vegetables. So we make a super non-specific and unproductive New Years resolution to do just that: Eat More Vegetables.
Well, that’s just not going to cut it. You need something Specific, Measurable, Actionable, Realistic, and Time-bound (SMART). Well, I’m upping the game. This isn’t just SMART…it’s Super Simple SMART. SSSMART.
SSSMART goal: Eat 9 cups of vegetables every day using the preparation technique you’re about to learn.
And if you stay till the end, you’ll see how I can do this for under $7 if I need to. WHICH IS CRAZY.

How To: Eat More Vegetables (the smart way)
Now, listen up for a second while I tell you the most important thing you’ll ever hear about eating more vegetables:
It’s all about PROCESSING, SEASONING, AND COOKING. Sounds almost too simple. But you have to have amazing texture and something that’s easy to eat. You know when you order a salad and they haven’t cut up the leaves and they’re like the size of your head?! This is the opposite of that. That’s where processing comes in. But who care if you’ve got great texture and easy eating if it’s bland! That’s where seasoning comes in. Once you’ve done the processing and seasoning, just toss it in the oven and cook it to perfection and you’re on the way to a healthier life. Seriously.
You can do this with nearly any vegetable combination. Here are a couple other combos I’ve used:
- Cabbage, asparagus, mushrooms (what I used in this video)
- Kale, cauliflower, celery
- Beets, carrots, brussel sprouts
- Radishes, swiss chard, asparagus
- Broccoli, carrots, cauliflower
The options are truly endless. And don’t get me started on stuff like adding bacon. There’s so much you can do with this recipe, but it’s really about getting your nine cups of veggies every day. Who knows (I do…)? This article could add years to your life if you apply it.
You don’t need many tools to do this but here are the essential tools that some people might not have:
- Sea salt
- Black pepper
- Olive oil
- Fish Sauce
- Chili powder
- Red pepper flakes
- Curry powder
- Garlic powder
- Anything you like
